Bluefin Tuna with Soy-Lime Dressing

We’ve teamed up with The Fish Society​​​​​​​ to bring you this epic Bluefin Tuna recipe, big on flavour but seriously easy to make!

Ingredients
1 orange, juiced of
½ lime, juiced of
small knob of fresh ginger, julienned
1 garlic clove, thinly sliced
2 tsp sesame oil
1½ tbs mirin
dash of fish sauce
1 tsp agave syrup or honey
squeeze of sriracha or a few slices of fresh red chilli
splash of soy sauce
1 fresh Fish Society bluefin tuna steak
1–2 tbsp sesame seeds
Optional garnish: coriander, or thinly sliced spring onion

Method

In a small bowl, mix together the orange juice, lime juice, ginger, garlic, sesame oil, mirin, fish sauce, agave syrup, sriracha, and soy sauce.
Stir well and leave to steep.

Press sesame seeds onto both sides of the tuna steaks to form a crust.
Heat a griddle pan until very hot.
Add the tuna and sear for around 1–2 mins on each side, depending on the thickness and how rare you like it.

Slice the tuna thinly and arrange over a plate.
Spoon over the dressing and finish with your choice of garnish.
