Dressed Pineapple. A refreshing dessert with a zesty twist! This quick and vibrant recipe combines the tropical sweetness of pineapple with a hint of heat from chilli and aromatic basil. Itโs an effortless way to impress with bold, fresh flavours!
Ingredients
1 pineapple
175-225g
caster sugar
1 red chilli, deseeded and finely sliced
2 limes, zest and juice
basil, shredded
Method
Peel and slice the pineapple, removing the core OR cut into eighths lengthways through the leaves and cut flesh close to the skin, then cut into wedges (as pictured).
In a saucepan, cover the sugar with water and heat, stirring until the sugar is dissolved.
Add 4 strips of lime zest to the sugary water and boil until a thin syrup.
Remove the zest and cool.
Add the sliced chilli to the syrup, together with some lime juice to taste.
To serve, pour the syrup over the pineapple and sprinkle with the shredded basil.
